Behind every toasted marshmallow, behind every dough left to ferment without hurry, there is one conviction: that food is, above all, an excuse to bring people together. Rafael Castro founded D'Fogata on that simple, stubborn idea — to bring back the ritual of the campfire, the moment someone holds something over the embers and shares it.
What started as a handful of artisan flavors became, over the years, a kitchen that respects where every ingredient comes from and is not afraid to blend traditions. The same hands that once toasted marshmallows now bake sourdough pizzas and look after a matcha brought from Shizuoka.

The project is born in Cabo San Lucas with an original, handmade concept: marshmallows made by hand in a range of natural flavors — cocoa, piña colada, mint, strawberries and cream, cardamom and date — built to be toasted and enjoyed in a proper s'more.
It quickly wins over locals through home delivery and kiosks around town, betting on rustic pastry and sweet experiences meant to be shared around a fire.
The business makes its rebrand official and takes the name it carries today. The offering grows beyond marshmallows and desserts: a specialty coffee bar arrives, with select beans and premium spices to go with every creation.
Fire stops being just what toasts the marshmallow, and becomes the philosophy of the whole house.
D'Fogata rounds out the menu with inventive breakfasts, bakery and savory dishes made the artisan way — sourdough pizzas and focaccias at the center, plus a dedicated line of sweet crêpes and savory galettes.
Today it is one of a kind in Los Cabos: the comfort of the campfire — artisan marshmallows and ice cream — meeting a fine coffee bar and a contemporary bakery. The same fire as always, with many more stories to tell.
