Sourdough for pizzas & focaccias

Felicia & Chispa

Our pizzas and focaccias use no commercial yeast: they come from two sourdough starters, living fermentation cultures we feed every day. This is how long they’ve been alive, right now.

How they work

Two starters, two crafts.

Chispa, the elder, uses regular flour and makes the focaccias: open crumb, thin crust, olive oil at the end. Felicia, whole-wheat, makes the pizzas.

Both are fed daily and rest as long as they need. There’s no step you can rush without it showing on the plate.
